The unique seaclay soil of the North Holland pastures gives the cow’s milk a sweeter flavor and softer consistency. This rare milk allows Beemster cheese to remain creamy as it ages, creating unparallel taste. Beemster Classic, aged for 18 months on traditional wooden boards, is crafted using century old artisan technique. Excellent with a rich Fruity Merlot from Napa or a Merlot influenced Bordeaux from Pomerol or St. Emilion. For a white try a Dry Alsatian Riesling or a Sweet Dessert Wine if served at the end of a meal
