Aged 6-8 months, Elk Mountain is made in the tradition of a Pyrenees tomme, but the rind is washed with Honey Wheat Ale during its aging, adding character to the body of the cheese as well as a lovely golden color to the rind. It is a hearty, dry cheese with a sharp nutty finish. This cheese was selected by Wine Spectator magazine as one of the 100 Great Cheeses! Pair with Champagne, Viognier, Syrah, or a Full-bodied Ale.
