Katy Hedrich or LaClare Farm in Chilton, WI makes this award-winning gouda-style goats’ raw-milk cheese. Everyone (including me) describes it as a supple, sweet, smooth, unique cheese. If you don’t think you are a fan of goats milk cheese, this is a great place to start. The tanginess that makes goats milk cheeses hard for people to eat is subdued enough by the style and aging that it’s only slightly apparent. This cheese won Best in Show at the US Cheese Competition in 2011. It’s only gotten better!
