El Guijoso vineyard (.2ha).
Calcareous clay + stony soils w/ high percentage of chalk.
Fermented via indigenous yeasts in 630L, Spanish chestnut.
Maceration + aging = one year.
Gentle resting in 225L Spanish oak before bottling.
No SO2 added during entire process of vinification.
300 magnums produced."
