Name: Bernard Baudry Chinon Le Clos Guillot
Producer: Domaine Bernard Baudry
Varietal: Cabernet Franc
From the Winery:
"Le Clos Guillot is refined. With its aromas of sour cherries and black fruit, it can show characters of Pinot Noir sometimes. It has length and freshness. It can be enjoyed from 2 years in bottle and can age 10 to 15 years.
Soils: Limestone coteau exposed South-South/West, with clay on top of the hill and yellow tuf (limestone) lower on the slope.
Vinification/Aging: Manual harvest. Two-week fermentation in cement or oak vats, then twelve-month aging in oak barrels, 2-5 years old, followed by 9 months in unlined cement vats. Bottling in September, two years after harvest. No filtration."
