"Chardonnay has been established in the Jura since the 16th century. It was already considered a "thin plant". So our Côtes du Jura Blanc is a pure chardonnay. After fermentation (without chemical yeasts), it is put in barrels of old oak, with a capacity of 300, 600, 800 or 1,200 liters. Like red wine , it will remain at least four years, so that the soil grows to the maximum. In addition, this long period in cold cellars allows the wine to acquire a nice balance, making it pleasant to drink immediately. Finally, this is the only way to get a solid wine that can improve between 100 and 150 years. With the exception of a first year, the wine in the barrels lives in contact with the air, without yeast veil, unlike the yellow wine."
